How to cook your favorite fruit: pineapple

Famous as one of the most novel and traditional Sri Lankan recipes, the Sri Lankan pineapple curry recipe has a special position among others. The Sri Lankan pineapple curry recipe has all the flavors to enhance the taste of whatever other carb dish you are consuming it with. This recipe is perfect to be had with a nice and warm white rice, accompanied by a couple of other Sri Lankan curries.

Ingredients

300g diced pineapple

1/4 thinly sliced onion

1 sliced green chili

2 cloves of sliced garlic

Rampe and curry leaves

1 tbsp. curry powder

½ turmeric

1 tbsp. chili powder

1 tsp dill

1 tbsp. kithul treacle

1 cup of thick coconut milk

Salt to taste

Method

1. In a large saucepan, heat the oil and add the onion, garlic, rampe, and curry leaves, as well as the green chilies, and cook until aromatic. Sauté the pineapple for a few minutes more.

2. Combine all of the condiments in a large mixing bowl. The coconut milk and kithul treacle are then added and brought to a boil. Serve after tasting.
